Homemade Giant Lion Bar

Lion is a chocolate bar consisting of a waffle core coated with caramel, wheat cereals & milk chocolate.

Ingredients for 1 Homemade Giant Lion Bar:

  • 350 grams milk chocolate
  • 300 grams vanilla waffles
  • 75 grams white chocolate
  • 200 grams sugar
  • 130 grams dextrose
  • 200 milliliters cream
  • 75 milliliters water
  • About 50 grams wheat cereals

Required kitchen gadgets, helper & preparations:

  • Loaf pan (length ~30cm)
  • Pot + suitable bowl for the double boiler or use a microwave to melt chocolate
  • Baking paper
  • Cutting board
  • Brush
  • Large pot for the caramel
  • Whisk
  • Candy thermometer
  • Flat Tupperware container (length ~30cm)
  • Cling film
  • Knife

Homemade Giant Lion Bar - Step 1First line a loaf tin with parchment paper, melt 150 grams milk chocolate & pour into the loaf pan…

Homemade Giant Lion Bar - Step 2…evenly brush the chocolate at the bottom of the pan…

Homemade Giant Lion Bar - Step 3…allow to chill in the fridge for about 30 minutes…

Homemade Giant Lion Bar - Step 4…then get the loaf pan out of the fridge, remove the baking paper…

Homemade Giant Lion Bar - Step 5…& place the chocolate plate onto a cutting board…

Homemade Giant Lion Bar - Step 6…next, melt 75 grams of white chocolate over a double boiler (or in the microwave) & centrally brush a large strip of white chocolate onto the milk chocolate plate…

Homemade Giant Lion Bar - Step 7…now gradually “stick” the first layer of vanilla wafers on the chocolate, make sure that before & next to the waffles 1 centimeter remains free…

Homemade Giant Lion Bar - Step 8…then another strip of melted white chocolate…

Homemade Giant Lion Bar - Step 9…& a layer of vanilla waffles…

Homemade Giant Lion Bar - Step 10…until all wafers are used up…

Homemade Giant Lion Bar - Step 2…for the caramel layer heat up a large pot adding 200 grams sugar, 130 grams dextrose, 200 milliliters cream & 75 milliliters water…

Homemade Giant Lion Bar - Step 13…over medium heat stir with a whisk until the sugar has completely dissolved…

Homemade Giant Lion Bar - Step 14…& the caramel starts to simmer…

Homemade Giant Lion Bar - Step 15…once the caramel boils up stop stirring & brush the side walls of the pot with some water to wash off the residual sugar, which has deposited on it by stirring…

Homemade Giant Lion Bar - Step 16…then cook the caramel without stirring & always check the temperature with a sugar thermometer…

Homemade Giant Lion Bar - Step 17…once the caramel reaches a temperature of 120°C remove the pot from the stove…

Homemade Giant Lion Bar - Step 18…& pour the hot caramel into a flat Tupperware container (length ~ 30cm), which is lined with cling film, then allow to cool completely at room temperature and/or in the fridge…

Homemade Giant Lion Bar - Step 19…lift the cooled caramel out of the container & remove the cling film…

Homemade Giant Lion Bar - Step 20…then with a sharp knife…





Homemade Giant Lion Bar - Step 21…cut the caramel plate into 3 equal sized strips…

Homemade Giant Lion Bar - Step 22…place the caramel strips on the left, right & over the waffle core and press gently…

Homemade Giant Lion Bar - Step 23…brush with your fingers over the caramel & gently press to cover also the front & back of the waffle core with caramel…

Homemade Giant Lion Bar - Step 24…until the whole candy bar is coated in caramel…

Homemade Giant Lion Bar - Step 25…finally press about 50 grams of wheat cereals all around the caramel…

Homemade Giant Lion Bar - Step 26…& brush the whole bar with 200 grams of melted milk chocolate…

Homemade Giant Lion Bar - Step 27…then allow to harden in the fridge…

Homemade Giant Lion Bar - Step 28…cut the giant Lion into slices with a knife…

Homemade Giant Lion Bar - Step 29…& serve!
