Marshmallow Fluff is a marshmallow-taste spread including sugar, egg whites and possible flavoring and coloring agents. Unlike the traditional known marshmallows the spread dispensed on a gelling agent and remains spreadable. In today’s post I will show you how to make this delicious Marshmallow Fluff at home.
Homemade: Homemade Marshmallow Fluff

Ingredients for about 1 jar of “Marshmallow Creme”:
- 1 egg white
- 80 grams of sugar
- 80 milliliters of water
- 1 pinch of baking soda
- 1 packet of vanilla sugar
- 80 grams of powdered sugar
Required kitchen gadgets, helper & preparations:
- A small pot
- A whisk
- A spatula
- Mixer/Food processor
- A jar to bottle the marshmallow creme
Instructions for the homemade marshmallow fluff:
Heat up a small pot and add 80 grams of sugar…
…and 80 milliliters of water…
… stir everything using a whisk…
…bring the sugar mixture to a boil & let simmer about 5 – 6 minutes until it forms a syrup
Meanwhile: Give an egg white in a mixing bowl/food processor…
…in addition a pinch of baking soda…
…and a packet of vanilla sugar…
…and then beat the egg white until stiff.
Slowly stir in the sugar syrup while still hot…
…and then keep stirring until creamy at maximum speed for at least 5 minutes.
Afterwards add 80 grams of powdered sugar…
…stirring another 2 – 3 minutes…
…until a tough, firm and spreadable marshmallow fluff cream has formed.
Pour the marshmallow cream in a screw-top jar…
…and serve!

Kann ich statt den warmen sirup auch kalten Ahornsirup nehmen? oder vielleicht erhitzen Ahornsirup? und wie sieht das mit stevia oder Xylit ersatz aus?
Das kann ich dir nicht zu 100% beantworten , weil ich es selbst noch nicht ausprobiert habe, einen Versuch ist es aber Wert. Kannst ja mal Bescheid geben, ob es geklappt hat.
Super einfaches Rezept, hätte ich gar nicht gedacht. Aber der Puderzucker später lässt es etwas nach Zuckerguss schmecken.Vergeht das wieder? Hab auch schon gut 5min verrührt statt 2-3min.

Das hat gar nicht funktioniert eine klebrige Zucker Masse so weit entfernt von Fluff wie der Mount Everest von der Rhön. ..enttäuscht. ..
Das hört sich ja sehr interessant an!
Wie lange ist das denn in etwa haltbar?

hab es heute für riesensnickers ausprobiert. hat super geklappt! hab allerdings von allem die doppelte menge genommen. wäre vielleicht ganz gut, wenn es eine mengenangabe vom fertigen produkt gibt, damit man weiß, wieviel man rauskriegt. auf jeden fall danke fürs rezept.
